I just had to share my dinner tonight with you guys. We had homemade Chicken Fajitas! There is a total 4 people in my family and this made enough for each of us to have two VERY FULL fajitas.
Here's the recipe:
- 1/2 Yellow Onion*
- 1 whole Red pepper*
- 1 whole Green bell pepper*
- 2 pkts. precooked chicken
- 1 pkt. fajita seasoning
- 1 pkg. burrito shells
- 1pkg. shredded cheddar cheese (if desired..we omit)
- *you can add as much or as little as you desire*
Brown the chicken in a skillet until lightly golden brown. Add the onion/pepper mixture to the chicken and sautee for 5-8 mins or until the pepper/onion is soft. Add fajita seasoning and cook for 2-3 more minutes. Heat burrito shells in microwave for about 20-30 seconds. Assemble and enjoy!
Now, here's what made it so budget friendly:
- Burrito Shells $2.19 for pk. of 16
- Red & Green pepper $1.32 from local farmers market
- 2 pks. precooked chicken (Perdue brand) 2/$5 from Foodlion and I used 2- $.75/1 q's
- Onion $.79/lb from Foodlion (mine was $.45--only 1/2lb)
- Ortega Fajita Seasoning $0.00 (free from 3 triple events ago)
Grand total: $7.43 for a family of 4!!!
Total per serving (makes 8): $.93!!!
